1
Take one bunch of fresh celery and pull apart the stalks from the heart.
-
2
(Only use the green sticks; about 12 sticks will work fine here, you dont want to use the center smaller bitter ones here.
-
3
But hold on to them for other recipes if you like.)
-
4
Wash the celery well to get rid of any soil.
-
5
Chop off the white bottom ends, about 1 or so up from the end of the stalk.
-
6
Chop off about a 1/2 off the top of the stalk to have fresh clean cuts on both ends.
-
7
Then cut the stalks in half to have even-sized length sticks.
-
8
Then take a small knife (like a butter knife, it does not have to be sharp) and scoop out some peanut butter and smear into the celery stick crevice, as much peanut butter as you can fit.
-
9
Then do the same for the other half of the celery sticks with the cream cheese.

For plating, all you need to do is lay them out on a plate with the filling side up.
