Super Simple Shortbread Cookies

   1. Preheat oven to 400 F. Mix together all ingredients (except the extra pinch of sugar) in the bowl of a stand mixer. Mix until the dough comes together.

   2. Roll out the dough on a lightly floured work surface using a rolling pin. Roll it to about 1/4 to 1/8 inch thickness.

   3. Use cookie cutters or cut however you'd like. Place cookies on a cookie sheet that you've lined with parchment paper or a Silpat.

   4. Sprinkle a bit of sugar on top of all of the cookies.

   5. Bake for 10 minutes at 400 F. Keep an eye on the time because depending on the thickness of the cookies and your oven it may need more or less time.

   6. Remove cookies from the oven and immediately transfer them to wire racks to cool. I am pretty bad about doing this step, but if you don't transfer them the bottoms will be too burned!
