Ingredients: 4 large tomatoes; 2 Chicken Breasts; 2 Celery Stalks; 2 Hard boiled eggs; 3 tbsp Sweet Relish; 1 Mayonaise; 4 large Whole pieces of lettuce; 1 dash Salt and Pepper; 2 dash Paprika; 1 tbsp Freshly squeezed lemon juice

4 large tomatoes
2 Chicken Breasts
2 Celery Stalks
2 Hard boiled eggs
3 tbsp Sweet Relish
1 Mayonaise
4 large Whole pieces of lettuce
1 dash Salt and Pepper
2 dash Paprika
1 tbsp Freshly squeezed lemon juice

Cut the top off Tomatoes

Cut a little off the bottom of the tomatoes (this will allow the tomatoe to sit on a flat surface)

Hollow out all of the insides of the tomatoes with a tbls

Season insides of tomatoes with salt and pepper

Refrigerate to chill standing upright

Dice chicken in small pieces

Chop boiled eggs into the chicken

Add relish

Dice celeryand add to chicken mixture

Add mayonaise to desired consistency

Add lemon juice

Add salt and pepper to taste

Stir chicken mixture well

Ready to stuff tomatoes

Take two pieces of lettuce and carefully stuff inside the tomatoes leaving some lettuce hanging outside / around tomatoes

Sfuff chicken mixture inside th lettuce filling to the top

Sprinkle lightly with paprika

Ready to serve if stuffed fomatoes are not going to be served at that time cover with clear plastic and keep refdigerated.
