Stuffed Roast Duck

   Bring to boil in covered saucepan over full gas flame the ducks, salt, pepper, bay leaf, celery leaves, parsley, onion, carrot and water to cover; reduce flame to simmer (200u00b0 to 225u00b0 dial setting on controlled burner) and continue cooking 1 hour. Remove from flame and let stand until cold.

   Drain.

   Stuff ducks and place on rack in shallow pan.

   Place over breast of each duck 2 slices of bacon or thin salt pork.

   Roast in moderate gas oven (325u00b0) for 20 minutes per pound.
