Ingredients: 3C Bread Flour; 3tsp Baking Powder; 3Tbsp Sugar; 1/4 tsp Salt; 9Tbsp Butter, softened to room temp.; 1C Milk; 8-10C Sliced Strawberries; 1C Sugar; 1/2C Heavy Whipping Cream; 1/4C Sour Cream; 2-3Tbsp Confectioners Sugar

3C Bread Flour
3tsp Baking Powder
3Tbsp Sugar
1/4 tsp Salt
9Tbsp Butter, softened to room temp.
1C Milk
8-10C Sliced Strawberries
1C Sugar
1/2C Heavy Whipping Cream
1/4C Sour Cream
2-3Tbsp Confectioners Sugar

Combine strawberries and 1C sugar in large bowl and gently mix to coat strawberries evenly with sugar. Set aside at least 30 mins.

Combine Flour, baking powder, salt and 3Tbsp of sugar. Add 1Tbsp of butter at a time, combining with flour mixture each time. Add milk and mix conservatively. Consistency should be like loose, sticky biscuit dough. Drop 6-8 equal size portions onto a greased baking sheet and form into a dome shape. Bake @ 375u00b0 for 20-25 mins, or until just turning golden brown on top. Turn off oven and let shortcakes set with door slightly ajar.

Combine heavy whipping cream, sour cream and confectioners sugar in a bowl and beat with an electric mixer until peaks are formed.

To serve, slice off top third of shortcake and set aside. Place a large spoonful of whipped cream on base of shortcake followed by 1 to 2 spoonfuls of strawberries. Place top back on and cover with another layer of whipped cream and strawberries. Garnish with fresh strawberries, mint, or shaved dark chocolate.
