Strawberry Salad With Balsamic Vinegar

   Place the strawberries in a bowl and dress with the vinegar. Stir and let them rest for 15 minutes in the refrigerator.

   Drain the strawberries and set aside, keeping the vinegar.

   Add the olive oil and salt and pepper to taste to the vinegar. Mix until it emulsifies.

   Place the lettuce in a salad bowl and pour the dressing over it, mixing carefully.

   Add the strawberries, and goat cheese if desired.
