For the syrup:

Combine the trimmed and halved strawberries in a saucepan with the sugar and water. Bring the mixture to a boil then reduce to a simmer. Cook, stirring constantly, until the sugar dissolves and the mixture begins to thicken a bit, about 5 minutes. Let cool completely. Then, using a fine strainer, strain the strawberries over a bowl to extract the syrup.

For the sangria:

Add the sliced strawberries to the strawberry syrup along with the white wine and lime juice, then cover and refrigerate for up to 24 hours.

Just before serving, transfer the syrup into a pitcher then add 1-2 cups of sparkling water, depending on preference.

Finish each glass with a slice of orange and lime and top with a bit of spiced rum.
