Heat skillet to medium.

Put 1 Tablespoon of butter in the skillet.

Slice strawberries.

Spread the remaining butter on 1 side of each of the slices of bread.

Spread softened goat cheese on the other side of each slice of bread (the un-buttered side).

Place the bread (butter side down) on the skillet.

Layer the top of one of the slices with the basil, arugula, strawberries and a sprinkle of salt and pepper.

Top that with the other slice of bread, goat cheese side down.

Cook the sandwich on both sides until bread is golden brown, flipping half way through.
