Finely dice 1 1/2 cups strawberries and mix with 1 tbsp sugar. Set aside for 20 mins. Meanwhile, beat the egg whites until stiff then beat in 1 tbsp sugar. Whip 1/2 cup cream in a separate bowl until stiff.

Beat the egg yolks and 1/4 cup sugar until creamy then stir in the vanilla. Mix in the yogurt and diced strawberries then fold in the egg white. Transfer to a flat, wide bowl then cover and freeze overnight.

Remove from the freezer 20 mins before serving. Set aside 4 strawberries for garnish then chop the rest and mix with 2 tbsp sugar. Divide between 4 serving bowls.

Place the chocolate and coconut oil in a bowl above a pan of gently simmering water and stir until melted. Divide the frozen yogurt between the 4 bowls and drizzle with chocolate. Dip the reserved strawberries in the leftover chocolate then serve.
