Preheat oven to 325u00b0F. Grease and line base and sides of a 7 inch springform pan with parchment paper.

Whip egg whites to stiff peaks, gradually whisking in sugar, until smooth and glossy. Lightly whisk egg yolks then fold in. Sift flour, cornstarch and baking powder over top and fold in. Transfer to prepared pan and bake for 20-30 mins, until just firm to the touch. Let cool in pan.

Once cool, remove from pan and cut horizontally into 3 layers. Sandwich layers together with jam. Transfer to a serving platter. Beat cream cheese and powdered sugar until smooth then beat in beet juice to color. Spread over top and sides of cake and chill until ready to serve.

Decorate with strawberries.
