Cut the pork into bite sized pieces and sprinkle with salt, pepper and 1 tablespoon of white wine.

Chop the onion and quarter the king oyster mushrooms horizontally.

Heat 1 teaspoon of olive oil in a frying pan and fry the pork.

When the colour has changed, take out the pork.

Clean the frying pan and add 1 teaspoon of olive oil, garlic and red chilli.

Heat the pan and add the onion to fry until softened.

Add 1 tablespoon of white wine and the ingredients into 3 and bring to a simmer.

Put a lid on and simmer over a low heat for 5minutes.

Add the ingredients and king oyster mushrooms and mix well.

Reduce the sauce by about 1/4 over medium heat.

Season with pepper.
