Ingredients: marinate 1/2 lb. flank/skirt steak for 30 mins in:; 1/3 cup fresh lime juice; 1/4 cup olive oil; 1 tablespoon minced garlic; 1/4 teaspoon cayenne pepper; 1tsp salt; for blue cheese aioli:; 1 cup mayonnaise; 1 Tablespoon minced garlic; 1 teaspoon lemon juice; 1/2 teas salt; 1/8 teaspoon cayenne pepper; add to aioli and process till smooth:; 1/3 cup crumbled blue cheese; assemble with:; 2 cups monteray jack cheese, shredded; 1 red pepper grilled, peeled cut in strips; 1 yellow pepper same as above; 4 8 inch flour tortillas saute in slightly oiled pan

preheat grill when hot grill peppers until charred (10 mins) steam in plastic bag until cool

grill steak 5-10 mins on each side-slice at angle

add tortilla to pan and sprinkle with 1/2 cup cheese.

lay steak and peppers on one half-turn over the flap when cheese melts.
