Cream together butter and sugar. Add eggs one at a time and blend together. Add bananas and vanilla, then mix well.

I don't like using more bowls than I have to, so add flour, soda, and salt right on top of your creamed mixture and blend well.

This is where you can be creative. I add chocolate, nuts and dried fruit, and mix well. You can add any variation you like between nuts and dried fruit, but because I have kids coming and going, chocolate is a must!

Place by spoonfuls 3/4 full in muffin cups. Bake 20 minutes until golden brown. Cool slightly in muffin pans before removing and turning out on wire racks to cool completely.
