1 1/2 cups All-Purpose flour
2 tsp. baking powder
1/2 tsp. baking soda

1 3/4 cups Spring Mix Lettuce
3/4 cup chopped walnuts

["Preheat oven to 350. Lightly coat 3 small loaf pans(3""x5"") with spray vegetable oil and flour pans. In large mixing bowl beat oil, water, sugar, eggs and lemon peel until well-blended and lemony color. In a medium bowl stir flour, baking powder and soda, salt, ginger & mace. Slowly add the flour mixture to the egg mixture until smooth. Add lettuce and nuts. Pour and divide batter into loaf pans. Bake for 45 minutes or until top is golden brown and wooden pick comes out clean. Cool in pans for 20 minutes on wire racks then turn out on rack and cool completely. May be served warm or cooled. Freezes well! Serve cream cheese or butter on side."]
