Sponge Cake Made with Pancake Mix

   Beat the eggs and sugar together.

   Beat until you can draw a slowly disappearing ribbon on the surface of the mixture.

   Fold in the pancake mix, then add the milk and gently combine.

   Try not to break down the foam.

   Line a cake pan with parchment paper and pour in the batter.

   Gently drop the cake pan onto a flat surface a few times to get rid of the trapped air in the batter.

   Bake in the 170C oven for about 20 minutes.
