1. Preheat oven to 375 degrees. Place piecrust in pie pan and put pan on a rimmed baking sheet lined with foil.

2. In a medium skillet over medium heat, drizzle in olive oil. Add garlic & onion & saute until translucent, 5 - 7 minutes. Do not let garlic burn. Add spinach, a little at a time, & cook until wilted. Season with salt & pepper & let cool.

3. In a bowl, whisk eggs & half-&-half. Add lemon zest & thyme. Add spinach, feta & half the swiss cheese & mix until well combined. Season with salt & pepper.

4. Pour carefully into piecrust & sprinkle remaining swiss cheese evenly over the top.

5. Bake for about 40 minutes or until center is set. Cool at least 10 minutes before serving.
