Spinach and Orange Salad

   Remove the peel and pith from 2 large oranges and cut out the segments.

   Do this on a plate to reserve any juice.

   Cut 1/2 cucumber in half lengthways and slice mix with baby spinach.

   Add the sliced spring onions and oranges.

5. 5

   Whisk the orange juice lemon juice, honey and mustard.

6. 6

   Just before serving add dressing to the salad.
