2 bunches fresh spinach trimmed and chopped
6 green onions sliced
4 eggs lightly beaten
1 1/4 cups crumbled feta cheese
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1/4 teaspoon ground nutmeg
8 sheets phyllo dough
1 stick cooking spray or 4 tbsp butter, melted
salad to serve

Preheat the oven to 350u00b0F. Grease an 8-inch square baking dish. Heat oil in a large skillet on high heat. Saute spinach and onions for 4-5 mins, until spinach has wilted. Cool slightly. Place mixture in a strainer; press to remove excess liquid.
