Ingredients: 2 tbsp Hot curry powder; 1/2 tbsp turmeric; 1 tbsp lemongrass finely minced; 4 thai chillies (minced); 3 clove garlic (minced); 1 chunk of ginger (minced); 1 onion coarsely chopped; 1 large chicken breast (cubed); 3 Red potatoes (cubed); 1 Green bell pepper, coarsely chopped; 2 cup coconut milk; 2 tbsp ghee or oil

Servings: persons

2 tbsp Hot curry powder
1/2 tbsp turmeric
1 tbsp lemongrass finely minced
4 thai chillies (minced)
3 clove garlic (minced)
1 chunk of ginger (minced)
1 onion coarsely chopped
1 large chicken breast (cubed)
3 Red potatoes (cubed)
1 Green bell pepper, coarsely chopped
2 cup coconut milk
2 tbsp ghee or oil

In hot pan, add ghee (oil) and curry powder and turmeric until a paste.

Add in your chillies, lemongrass, garlic and ginger.

Stir fry for 20 seconds.

Add in onions and green peppers and stir fry for 1 minute.

Add in chicken and potatoes and stir fry for 3 minutes.

Add in your coconut milk and bring to a boil.

Cover and simmer for 30 minutes
