Cut bacon into small pieces. Cook bacon in heavy large pot on high heat until brown,add the chopped onions and garlic. Cook on medium stiring frequently until onions are tender. Add beef to pot and cook until brown. Add tomatoes with juices, beans and chili seasoning mix.Add Optional TBLSP peanut butter.This is where you can throw in you handful of jalapenos. Add one bottle of your favorite dark beer. Bring chili to boil. Reduce heat to medium-low and cook until thickened to desired consistency, stirring occasionally, Cook for 1 hour to 1 1/2 hours. Season to taste with salt and pepper.

Ladle chili into bowls. Serve, passing cheese, onions and sour cream separately.
