Spicy Chinese Noodles With Cucumbers

   1. Boil 3 quarts water in covered pot.

   2. Wash, trim and cut cucumber into medium dice.

   3. Wash, trim and slice scallions coarsely.

   4. Combine cucumber and scallions with sesame oil, soy sauce, chili sauce, and vinegar in serving bowl.

   5. Cook fresh noodles in boiling water, until tender but firm.

   6. Drain noodles and mix thoroughly with sauce.
