Ingredients: ½ cup penne pasta; 4 chicken breasts, cut into 1-inch pieces; 1 plum tomato, sliced; 2 tablespoons tomato paste; 2 garlic cloves, minced; 14 chili flakes; 1 tablespoon lemon juice; 3 cups Baby Spinach; 1 tablespoon olive oil; salt

½ cup penne pasta
4 chicken breasts, cut into 1-inch pieces
1 plum tomato, sliced
2 tablespoons tomato paste
2 garlic cloves, minced
14 chili flakes
1 tablespoon lemon juice
3 cups Baby Spinach
1 tablespoon olive oil
salt

In a large pot of boiling unsalted water cook the penne pasta until al dente, adding the chicken during the last 2 mins of cooking.

Reserve 1/4 cup pasta water.

Drain the pasta and chicken, return to pot.

In the pot, add the tomato , tomato paste, garlic, oil ,chili flakes and spinach.

Season with salt and toss it well.

Cook over medium heat tossing until spinach is barely wilted about 1 minute.

Remove pot from th heat, stir in the the lemon juice and enough pasta water to make a thin sauce that coats the pasta.

Season with salt if necessary and serve immediately.
