For the cookies:

In a medium sized bowl, cream together butter, brown sugar and egg. Add flour, spices and baking soda. Mix well.

Refrigerate dough for about 2 hours or more. Roll out dough before or after refrigerating (see the related blog link for details).

Remove dough from the refrigerator. Roll out dough to about 1/4 inch thick. Cut out desired shapes and place them on a lightly greased baking sheet. Bake at 350 degrees F for 8-10 minutes. Cool on a wire rack. If you want to frost them, make sure to do so when cookies are completely cool.

Cream together cream cheese, vanilla and butter. Add powdered sugar. Whip until creamy.
