Place nine strips of streaky bacon in frying pan and cook till crisp, turning occasionaly to prevent burning.

Whilst cooking bacon, lighlty grill toast on both sides three slices of whole meal bread and remove from grill and put aside to cool.

Once bacon has cooked, drain off excess fat and put on side plate to cool.

Grate cheese to amount of desire.

Place three strips of bacon on each piece of bread.

Open tin of sardines and drain of excess tomato juice and slice sardines lengthways into nine pieces

Place sardines on top of bacon

Sprinkle black pepper to taste on each slice of prepared toast

Cover each slice with gratted cheese

Sprinkle hot sauce on each slice to taste

Place back under grill untill cheese starts to bubble

Remove and serve
