Spiced Couscous Galette with Queso Fresco

   In a large bowl, combine chili powder, paprika, coriander, cumin, garlic powder, salt, pepper, cooked couscous, eggs, mozzarella, and cheddar.

   Preheat a large nonstick skillet to medium-high heat.

   Melt butter and add couscous mixture to skillet, spreading into an even layer.

   Cook until golden brown on bottom, about 5 minutes.

   Remove from heat and place skillet under a broiler for about 5 minutes or until golden brown.

   Remove skillet from oven and invert a plate over skillet, flip and serve.

   Garnish with queso fresco and cilantro.
