Sparkling Candied Grapefruit Peel

   Wash the grapefruit by rubbing with salt.

   Rinse with water.

   (This is to remove any anti-mold agents.)

   Peel the grapefruit together with white pith.

   (The white pith wasn't bitter at all when cooked.

   Julienne the peel.

   Weigh the peel here.

   Put the peel from Step 3 in a pot and add plenty of water (not listed).

    Turn the heat on.

    Change the water when it boils.

    Repeat 3 times.

    This will eliminate the bitterness.

    Put the peel from Step 5, sugar and water in a pot, bring to a boil and simmer for about 30 minutes.

    Turn off the heat once the peel becomes translucent and a syrup forms.

    Drain the excess juice, and place the peel on a baking sheet.

    Dry in a 210F/100C oven for 30 minutes.

    Sprinkle with granulated sugar while it's still hot.
