Cut potatoes in half then quarters.

In a food safe plastic bag add potatoes, 1 Tbsp olive oil, and red chili powder. Shake bag well until potatoes are evenly covered.

In a heated saute pan, add potatoes and saute on medium high until potatoes become crisp.

Place potatoes in a shallow aluminum foil lined baking sheet and bake for about 15 minutes or until potatoes are softened to your liking.

Meanwhile arange sliced sausage in the saute pan with remaining oil and fry until golden, flip and repeat.

Add peppers, onion, and salt & pepper. Saute until onion is translucent.

Return potatoes to pan and toss with chives and garlic powder for about a minute.
