3 eggs
2 1/2 c. sugar
1 tsp. salt
1 stick margarine
1 Tbsp. nutmeg
1 tsp. cinnamon
1 Tbsp. vanilla
1 tsp. lemon
4 c. sweet potatoes, cooked and mashed
1 can flaked coconut
1 large can Pet milk
2 uncooked pie shells

Cook sweet potatoes, about 3 or 4 medium size.

Mash them as to cream.

Add 3 eggs, 2 1/2 cups sugar, salt, margarine, nutmeg, cinnamon, vanilla, lemon flavoring and Pet milk.

Mix all together until smooth.

Add coconut, 1 can flakes or 1 cup from package. Mix all together.

Pour into 2 shells.

Bake at 400u00b0 for 1 hour or until knife inserted halfway between outside and center of filling comes out clean.

Serve warm or cool, if desired.
