While yeast is growing, put starter in large bowl. Add flax, oil, salt, and some of the flour. Add flour until you can't stir with heavy spoon. Add prepared yeast - stir some more for batter consistency. Add more flour until you can't stir anymore. Now sprinkle another cup of flour all over dough, and let it sit for 5-10 minutes.

Now add more flour to make kneadable dough. Knead for 10-15 minutes. When kneading is complete, scrape bowl of bits of flour and dough. Pour olive oil in bowl, roll dough in the bowl to cover all surface with oil. Place plastic on the bowl and dough, and let sit for one hour to double or triple in bulk.

Shape bread, add slits, brush with egg wash, let rise, and put into stone-lined oven that has been sprayed with water. Bake in 350 oven until golden brown.
