Soft Dried Apricot & Walnuts Bites

   Put the walnuts in a food processor or a blender and process until coarsely ground.

   Separate 2 tablespoon of the ground walnuts to roll the bites and set aside.

   And set the rest of the walnuts aside separately in a medium sized bowl.

   Put the prunes and soft dried apricots in the food processor or blender}and process until very finely chopped.

   In the bowl, combine this mixture of soft dried apricots and prunes with the cream cheese and the ground walnuts.

   Stir until all is combined.

   Shape into balls that are roughly 1 inch in diameter then roll in the remaining ground walnuts.

   Keep leftovers in the fridge.
