1
For the filling: Place the ingredients in a small saucepan.
-
2
Cook over low heat until the apples begin to soften and they have released their juices, about 20 minutes.
-
3
Once the apples are cooked, place the mixture in a food processor and finely chop up the apples.
-
4
Set the mixture aside.
-
5
For the dough: Preheat the oven to 350 degrees F.
-
6
Combine the oil, honey, molasses, vanilla, and apple in a medium bowl.
-
7
Add the nutmeg, flour, and baking soda and stir to combine.
-
8
Roll the dough out to about 1/8 inch thick and cut out squares using a 3-inch square cookie cutter.
-
9
You should be able to cut out about 18 squares.
-
10
Place 9 of the squares on a baking sheet covered in parchment paper and spread the apple filling on each one.
-
11
About 1 tablespoon of filling will probably be what you need for each bar.
-
12
Place the remaining 9 squares on top of the bottom squares, 1 for each.
-
13
Using a fork, gently press down the edges all the way around each bar.
-
14
You dont need to press all the way as you would with a hand pie, just a light press.
-
15
Bake the bars for 15 minutes, or until golden around the edges.
-
16
Let cool on a baking rack.

Enjoy!
