6 tablespoons butter
1/4 cup finely chopped shallots
1/2 cup dry white wine
2 tablespoons white vinegar
1/2 teaspoon anchovy paste

1 tablespoon finely chopped chives
1 tablespoon finely chopped fresh basil or 1 teaspoon dried
1/4 cup peeled, seeded, diced, well-drained tomato

Prepare the snails and set them aside.

Remove the core from the lettuce.

Wash the leaves well.

Stack the leaves and cut them into very thin shreds.

There should be about eight cups loosely packed.

Heat two tablespoons of the butter in a skillet and add the lettuce.
