Position rack in lower portion of oven and preheat oven to 350.

Spread biscuits on baking sheet and cook according to package instructions. Set aside cooked biscuits until cool. Once cool cut biscuits into 1 inch pieces.

Increase oven temperature to 375.

In a saute pan over medium high heat, cook bacon until crisp. Drain cooked bacon on a paper towel and set aside. Add onion to saute pan with bacon drippings. Cook until onions are soft. Add celery, mushrooms, sage and thyme; cook until celery is soft. Transfer onion mixture to a large bowl. Add bacon to onion mixture; season with salt and pepper. Add biscuits and stock; stir to combine.

Transfer dressing into a baking dish. Cover with foil; bake 30 minutes. Remove foil; bake until dressing is lightly browned about 20 minutes more.
