Mix dry rub ingredients and set aside until needed.

Carefully cut the bone away from the prime rib and remove the membrane from the bones.

(Your butcher can do this for you at the time of purchase).

Season the inside of the prime rib and tie back together with butcher string (100% cotton).

Then season the outside generously with the rub.

Wrap in plastic wrap and refrigerate 24 to 48 hours (flipping several times).

Set up your grill for Indirect Heat with unlit charcoal.

Add hot charcoal to the unlit charcoal and place a drip pan in the middle and add water.

Place the prime rib on the grill over the drip pan an add with hickory wood chips.

Cook at about 300F to 325F.

(add more wet hickory wood chips as needed).

The cooking time of the prime rib will depend on the size (the larger it is the longer it will take).

You want to remove from the grill when the internal temperature is about 120F.

Remove from the grill and cover with aluminum foil and let rest for 20+ minutes before carving and serving.
