Heat the oil in a large frying pan, add the lamb and saute for 8-10 mins, turning.

Cook the pasta in salted, boiling water according to the package instructions.

Remove the lamb from the pan and season. Wrap in foil and set aside. Add the zucchini, onion and 1/3 cup water to the frying pan and saute over a medium heat for 4-5 mins, stirring. Mix in the chili and simmer for 1-2 mins.

Mix the mascarpone into the vegetables. Mix the cornmeal with 4 tbsp water until smooth then mix into the sauce and simmer, stirring for 1-2 mins until it thickens. Mix in the mint, lemon zest and lemon juice. Season. Drain the pasta and mix with the sauce.

Unwrap the lamb and slice. Arrange on 4 plates and add the pasta. Serve.
