   Mix the flour, polenta and baking powder with a pinch of salt in a bowl.

   In another bowl, mix the melted butter, milk and egg.

   Combine the two mixtures into one bowl and quickly mix them together. Add the goat cheese and mint leaves.

   Grease a muffin tin, unless using a flexible silicone mold.
