Gradually whisk in combined soda water and vodka, until smooth. Place bowl inside a larger bowl filled with ice to chill it. Dip onion rings into batter and lower into oil, frying 3-4 mins, until golden. Drain on paper towel, season to taste and repeat with the whole cornichons.

To serve, spread both sides of buns with mayonnaise and layer with spinach, tomato, patties, sliced cornichons and cooked onion. Serve with fried onion rings and cornichons.
