8 to 10 thin slices bacon
1/4 c. bacon drippings
1/2 c. chopped celery
1/2 c. chopped onion
3 Tbsp. sugar
3 Tbsp. flour
1 1/2 tsp. salt
1/2 tsp. celery seed
1/4 tsp. pepper
1/2 c. water
1/3 c. vinegar
4 to 5 c. cubed cooked potatoes

Broil or fry bacon until crisp; drain on paper towels and crumble.

Reserve 1/4 cup drippings.

Add celery to reserved bacon drippings in skillet; cook and stir until tender-crisp.

Add onion and cook 1 or 2 minutes longer.

Combine sugar, flour, salt, celery seed and pepper; stir into celery-onion mixture.

Add water and vinegar, stirring until smooth.

Bring to a bubbling boil; add potatoes and bacon.
