stir fry until chicken is golden brown, then add 1 Tablespoon (or more) chopped or grated ginger root and the same amount of garlic.

A few minutes later add the oyster sauce to taste.

Set aside.

Chop up bok choi or chinese cabbage (or some other leafy vegetable you like).

Stir fry stem pieces first in canola oil, then add half teaspoon of salt and one capful of rice vinegar.

Then add leafy portion, more rice vinegar and one Tablespoon chopped ginger root.

Finally top off with oyster sauce to taste.
