1
Place half of the chicken in a sealed bag with 2 tablespoons of the Italian dressing and shake to coat thoroughly.
-
2
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
-
3
Remove chicken from the bag and put it into the skillet and season with salt and pepper.
-
4
Cook until browned on both sides and cooked through.
-
5
Depending on the thickness this could take up to 5 minutes per side or longer.
-
6
Tenders will take less time.
-
7
Remove chicken from skillet.
-
8
Put the other half of the chicken into the bag with the dressing and mix to coat.
-
9
Then repeat the cooking process cooking it in the remaining olive oil.
-
10
Meanwhile, in a small bowl combine basil, tomatoes, 1/4 cup of Italian dressing, and 1/2 cup of shredded mozzarella cheese.
-
11
Once chicken is cooked, return all of the chicken to the skillet and turn heat to medium-low.
-
12
Pour prepared tomato-dressing mixture over the top and cover the skillet.
-
13
Cook for a few minutes longer, just until heated and cheese is melted.
-
14
Serve immediately.

*Note: I have also made this successfully using balsamic vinaigrette in place of the Italian dressing.
