Shiitake Noodle Soup

   Bring 2 cups of water to boil in a pot, cook the dried lentils on high for 5 mins.

   Add the shiitake mushrooms, onion and carrots.

   Chop the broccoli and other vegetables while cooking, then add those, the pasta, and add the lentil sprouts if using sprouted lentils.

   Simmer until the pasta is cooked and the vegetables are soft.

   Add olive oil and sea salt to taste.

   Serve and garnish with fresh sprouts if you like.
