1/2 c. flour
1/2 c. oil
2 c. minced onions
1/2 c. minced celery
1/2 c. minced green onions
1/2 c. minced parsley
6 toes garlic, minced
1 1/2 quarts. water
1 tbsp. salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 lbs. shrimp, peeled
1 pound crabmeat or possibly 6 sm. seasoned boiled crabs (cleaned for gumbo)

In a 4 qt casserole dish make a roux with flour and oil (15 min).

Saute/fry onions and celery on high for 3 min then add in green onions, parsley and garlic and saute/fry 3 min.

Stir in water and seasonings.

Cover and cook on high 15 min.

Add in shrimp and crabs; reduce to medium; cook 25 min.

Add in oysters and juice; cook 10 min or possibly till oysters curl.

Sprinkle with file and set aside till ready to serve.

Reheat gently.
