1 env. (1 tbsp.) unflavored gelatin
1/2 c. sugar
1/4 teaspoon salt
4 slightly beaten egg yolks
1/2 c. lime juice
1/4 c. water
1 teaspoon grated lime peel
Few drops green food coloring
4 egg whites
1/2 c. sugar
1/2 c. whipping cream, whipped
1 1/2 c. cantaloupe balls
1 baked (9 inch) pie shell

Stir together egg yolks, lime juice and water.

Add in to gelatin mix.

Cook and stir over medium heat just till mix comes to a boil.

Remove from heat.

Add in lime peel and food coloring.

Chill, stirring occasionally till mix mounds.

Beat egg whites to soft peaks, gradually add in 1/2 c. sugar; beat to stiff peaks.

Mix in gelatin mix.
