1 pound Bulk Hot Italian Sausage
8 ounces, weight Sharp Cheddar Cheese, Grated
2 cups Bisquick Baking Mix
2 whole Eggs
1/2 cups Sliced Scallions
1/2 cups Roughly Chopped Cilantro
1 pinch Cayenne Pepper
1 cup Mayonnaise (I Used A Canola Based)
2 whole Chipotle Peppers From A Can
2 Tablespoons Adobo Sauce, From The Can
2 Tablespoons Lime Juice

Preheat oven to 350 degrees F.

Dump the sausage, cheese, baking mix, eggs, scallions, cilantro and cayenne pepper into a large bowl.

Mix with your hands until fully combined.

Using your hands, roll the mixture into 1-inch balls and arrange them on a foil-lined baking sheet.

Put the baking sheet into the preheated oven and bake for 18 to 20 minutes.

Remove from the oven.

Let the sausage balls cool 2 minutes before peeling them away from the foil.

For the dipping sauce: In a food processor combine the mayonnaise, 2 chipotle peppers, the adobo sauce and lime juice.

Blitz until fully combined and smooth.
