2 egg yolks
2/3 cup butter
3 1/4 tablespoons pistachios toasted and coarsely chopped
1 3/4 ounces bacon sweet pancetta, cut into small cubes

Add the egg yolks and the butter in pieces, combine by using the tips of your fingers, the mixture should resemble oatmeal.
