Preheat oven to 350u00b0F. Spread salsa evenly over 1 side of each piece of bread. Arrange 1/2 the slices, salsa-side up, in 4 individual or 1 large baking dish. Place inside of a roasting pan. Arrange antipasto vegetables and feta evenly over top.

Whisk together eggs and milk then season. Pour 1/2 the mixture over bread, pressing down gently with fingertips. Top with remaining slices of bread, salsa-side down. Pour remaining egg mixture over top, pressing down to ensure all bread is soaked. Sprinkle with Parmesan.

Add enough hot water to come halfway up sides of baking dish (or dishes) and bake for 15-20 mins (35-40 mins, if large). Serve with roasted cherry tomatoes.
