Mix yeast and warm water and let sit about 5 minute (sometimes I add 1 tsp sugar also just to make sure the yeast really activates)

Add flours, olive oil, honey and salt and mix together.

Add rest of flour.

Knead.

Grease bowl and let dough rest in warm place for at least 1 hour.

( I preheat my oven to about 100 then turn it off.

I set the dough in there cause it's often not warm enough in my house unless it's summer!)

Then I roll out and and while my oven is preheating to cook (about 400)

I put the crust in to bake just a little before adding the ingredients.

This will make one very large rectangle pizza and some pizza rolls -- or two circle shaped pizza crust.

You can always bake one and freeze it for next time.
