Peel potatoes, then slice potatoes in round 1/2 inch thick slices in a medium size bowl, with water.

In a cold frying pan start layering 1/2 c. of sugar, a little nutmeg and some potatoes; continue layering until all potatoes are used up.

Sprinkle sugar and nutmeg on top; cover and cook on top of stove for about 20 minutes on medium heat.

Watch closely; if the potatoes do not accumulate water, add 2 tsp. of water.

Recover and continue to cook the remaining time.

After cooing for about 20 minutes, remove lid and let the potatoes get some air.

When potatoes take on a sweet orange appearance and is tender to the touch lower the heat. You will need to remove lid several times to get the right color and texture.

When potatoes are almost done add butter, orange peel, and lemon extract; let cook for 2 minutes or until seasoning have blended nicely.
