Salted Caramel Sauce

   Begin by pouring the water in a saucepan.

   Carefully pour in the sugar making sure not to get any on the sides of the pan.

   Heat over medium heat until the sugar melts and then put the heat on high until it turns a golden caramel brown.

   This should take a good 20 to 30 minutes.

   Do not touch it while cooking.

   Trust me the caramel will be fine.

   Just before the sugar is a medium brown, heat up the cream a bit in the microwave.

   This will help prevent clumping* once added to the caramel.

   Slowly whisk in the cream being careful because the caramel may splatter.
