Place garlic in the baking dish in a single layer and drizzle with olive oil. Bake for 15 minutes, until garlic is soft. Remove garlic from the oven, mash and set aside. Raise the oven temperature 350 degrees F.

Meanwhile boil egg noodles until just tender. Drain and toss with vegetable oil and set aside.

In a large bowl lightly beat eggs with salt, black pepper, and cayenne if desired. Stir in garlic, followed by noodle mixture until well combined.

Spoon into prepared pan and bake for 1 hour.
